SAUSAGE JAMABALAYA CASSEROLE 
1 c. reg. rice, uncooked
2 c. hot water
1 lb. ground beef
1 lb. smoked sausage, cut into 1/2" slices
1 med. green pepper, chopped
1/3 c. green onion, chopped
3 cloves garlic, minced
1 (28 oz.) can tomatoes, undrained & chopped
1/2 tsp. salt
1/4 tsp. pepper

Combine rice and water in 2 quart casserole, stirring well. Cover and cook at high for 5 minutes. Stir well. Cover and microwave at medium for 11-15 minutes. Stir well and set aside.

Crumble ground beef into a 2 1/2 quart casserole. Stir in sausage, green pepper, onion and garlic. Cover and microwave at high for 10-11 minutes or until meat is done; stir twice. Drain well. Stir in rice and remaining ingredients. Spoon half of mixture into a 2 quart casserole. Cover with foil and freeze. Spoon remaining mixture into another 2 quart casserole. Cover and microwave at medium high for 8-10 minutes or until heated.

To serve frozen casserole, remove from freezer and cover. Microwave at medium low for 25-30 minutes, rotating and stirring after half the time. Then microwave at medium high for 8-10 minutes or until heated. Yields two (2 quart) casseroles.

Since microwave ovens vary in power, you may need to adjust your cooking time.
