MOM'S ANGEL FOOD CAKE 
1 1/2 c. sifted cake flour
1 1/2 c. sugar
1/2 tsp. salt
1 1/2 c. egg whites (1-13 eggs)
1 tsp. cream of tartar
1 tsp. vanilla
1 tsp. almond

Sift flour, 1/2 cup sugar, and salt 3 times. Beat egg whites until foamy, add cream of tartar, continue beating until stiff points as beaters are removed. Gently fold in 1 cup sugar, sprinkle little sugar at a time and fold gently each sprinkle. Then gently fold in sifted flour, little at a time. Pour into 10" ungreased tube pan. Cut through batter to remove air pockets. Bake in oven at 325 degrees for 1 1/2 hours, or 375 degrees for 35 minutes (I use this). Invert on funnel to cool. Remove and frost as desired.
