1 1/2 c. sugar 1/2 c. boiling water 1/2 c. light corn syrup 2 egg whites 1 tsp. vanilla 1 c. broken pecans Dash of salt Boil sugar, water, and syrup over medium high burner until it forms a 3 inch thread when a small amount is dropped from a spoon. When syrup has boiled a minute, beat egg whites in a deep, 2 quart bowl. Pour 1/2 of syrup over beaten whites in a thin stream, beating constantly and turning bowl several times. Cook remaining syrup until it spins a 5 or 6 inch thread. Pour over first mixture in a thin stream, beating constantly. Beat until thick and warm. Add vanilla, salt and pecans. Beat by hand until candy holds shape when dropped from a spoon. Drop by walnut-sized spoonfuls on buttered waxed paper. Top with pecan half. |
