MUFFINS 
1/2 c. vegetable oil
1 c. sugar
2 eggs
3 bananas, mashed
1/3 c. plain yogurt or sour cream
1 tsp. baking soda
2 c. flour, whole wheat or regular
Raisins
Chocolate chips
Coconut
Nuts

Mix all ingredients together adding last four ingredients as desired. Fill muffin tins (that have been sprayed with Pam) 2/3 full. Bake at 350 degrees for 20 minutes. Makes 12-16 muffins.

Can be made ahead and frozen.
