OAT BRAN MUFFINS 
2 1/2 c. oat bran
1/4 c. raisins or dates (optional)
1 tbsp. baking powder
1/2 tsp. salt (optional)
2 tbsp. Mazola oil
3/4 c. skim milk
3 egg whites or 2 whole eggs
1/3 to 1/2 c. honey or maple syrup
1 to 1 1/2 c. applesauce or grated apple

Mix together and bake at 425 degrees for 15 to 17 minutes. Makes 18 muffins. Mashed bananas or pumpkin can be used in place of apples. These freeze well. To thaw and reheat, put one muffin in microwave on high for 40 seconds.

Since microwave ovens vary in power, you may need to adjust your cooking time.
