LEMON SNOWBALLS 
1/2 c. shortening, softened
2/3 c. sugar
2 tsp. lemon rind, grated
1 egg
3 tbsp. strained lemon juice
1 tbsp. water
1 3/4 c. enriched flour, sifted
1/4 tsp. baking soda
1/4 tsp. cream of tartar
1/2 tsp. salt
1/2 c. nuts, chopped
Confectioners' sugar

Mix shortening, sugar, egg and lemon rind, then stir in water and lemon juice, sifted dry ingredients and chopped nuts. Flour hands and form dough into small balls.

Place about an inch apart on ungreased baking sheet and bake at 305 degrees for 10-15 minutes. Remove immediately from baking sheet and roll in powdered sugar to coat. Cool and store in tin.
