OATMEAL YEAST ROLLS 
1 pkg. rapid rise yeast
1/2 c. warm water
1 c. scalded milk (115-120 degrees)
1/4 c. shortening
4 1/2 - 5 c. all-purpose flour
1/4 c. sugar
2 tsp. salt
1 c. cooked oatmeal

Pour hot milk and water over shortening, sugar, salt, stir occasionally until shortening melts. Mix together the flour and yeast. Add hot liquid mixture. Stir in oatmeal. Add flour to make soft dough. Knead on lightly floured surface until smooth and satiny, about 10 minutes. Form dough into ball; place in greased bowl, brush with melted shortening. Cover, let rise until double. Punch dough down. Let rest 10 minutes. Shape into rolls, place on baking sheet. Brush with melted shortening; cover, rise until double. Bake at 400 degrees for 15 to 20 minutes. Remove from pans immediately. 3 dozen rolls.
