ZUCCHINI JAM 
6 c. zucchini
5 c. sugar
1 (6 oz.) box apricot Jell-O (or 2 [3 oz.] size)
1/2 c. lemon juice (fresh or bottled)

Grind zucchini and drain well. Measure 6 cups and boil until transparent (about 12 minutes). Be careful so it doesn't stick. Add sugar and boil 6 more minutes. Then add Jell-O and lemon juice. Boil 1 minute. Seal in jars with paraffin. Delicious and easy.
