$ZUCCHINI JAM$ 
6 c. zucchini, peeled, seeded and shredded (can use lg. ones)
6 c. sugar
1/2 c. lemon juice
1 (20 oz.) can crushed pineapple
2 sm. pkg. apricot flavor Jello

Bring to rolling boil and boil 15 minutes. Remove from heat and add Jello dry and mix well. Store in refrigerator. Process in hot water bath canner for 25 minutes.
