KAY'S BROCCOLI CASSEROLE | |
I fine this to be an easy recipe to use for so many dishes... You can add chicken or tuna or any kind of meat to this simple casserole and have a complete meal. This is an easy recipe to double if you need to. ENJOY!! 2 (10 oz. ea.) pkgs. frozen chopped broccoli, cooked and drained 1 cup mayonnaise 1 cup grated sharp cheddar (or more if you like) 1 (10 oz.) can cream of mushroom soup 2 eggs, lightly beaten 2 cups crushed Ritz crackers (any flavor) 2 tbsp. melted butter (you can use more if you like) Preheat oven to 350°F. Spray a 9x13-inch baking dish with non-stick cooking spray (Pam). In a large mixing bowl, combine broccoli, mayonnaise, cheese, soup and eggs. Mix well with spoon. Place the mixture in the prepared baking dish. Top with the crushed crackers and pour the melted butter evenly over crackers. Bake at 350°F for 35 minutes or until set and browned.
