BROCCOLI CASSEROLE 
1/2 lb. Velveeta cheese, cubed in small pieces
1 stick butter (1/2 for casserole and 1/2 for topping)
2 boxes (10 oz.) frozen chopped broccoli
4 oz. Ritz crackers

Cook broccoli according to directions on boxes; drain off water and put broccoli in a casserole dish. Add butter (1/2 of the stick), cut in pieces and the cubed cheese. Sprinkle salt and pepper to taste.

Topping: Crush the Ritz crackers and mix with the remaining 1/2 stick of butter (melted). Spread over top of broccoli.

Bake at 350°F for 30 to 40 minutes.
