CORN AND RICE CASSEROLE 
2 c. cooked rice
2 c. tomatoes
1/2 c. diced onion
Salt to taste
2 c. Niblet corn
1 stick butter
1/2 c. diced bell pepper
Grated cheese

Saute onions and bell pepper in butter. Combine rice, corn, and tomatoes in a casserole dish. Sprinkle with grated cheese and bake at 350 degrees until cheese melts.
