POTATO CASSEROLE 
3 lbs. new potatoes (red)
1/2 lb. bacon, fried and crumbled
2 bunches green onions, chopped
Salt and pepper
1 c. shredded Cheddar cheese

Parboil potatoes. Cut into chunks. Mix potatoes, onions, bacon, and drippings; salt and pepper. Place in casserole and top with shredded cheese. Bake at 350 degrees for 20 to 30 minutes. Easy and wonderful!

Note: Keep skins on potatoes.
