IRISH CHEDDAR PEAR JELLO SALAD 
Refreshing side to traditional St. Patrick's Day fare.

2 (3 oz. ea.) pkgs. lime jello
7 oz. Irish sharp aged cheddar, grated
2 (29 oz. ea.) cans pear halves, drained

Follow package directions on jello to prepare (may want to use pear syrup in place of some of the cold water).

Sprinkle 1/2 the cheddar on the bottom of a rectangular glass baking dish. Arrange the pears face down, alternating to fit more pears. Pour lime jello mixture over pears. Sprinkle rest of cheddar on top and refrigerate 4 hours.

Topping:

1 (8 oz.) pkg. cream cheese, softened
3 tbsp. mayonnaise

Before serving, cream together softened cream cheese and mayonnaise, and pipe rosettes onto individual servings. Can dust with cumin or oregano for color. Cut into squares and serve from the dish.
