OATMEAL RAISIN FLATTIES | |
1/2 cup (1 stick) butter (no substitutions) 1/3 cup butter flavored Crisco 1 cup dark brown sugar, packed 1/3 cup granulated sugar 2 eggs 1 tbsp. vanilla 1 cup all-purpose flour 1/2 cup processed rolled oats (1 cup whole oats ground in food processor) 1 tsp. baking soda 1 tbsp. cinnamon (I use Vietnamese) 1/2 tsp. salt 2 cups regular rolled oats 3/4 cup raisins (I use Sunmaid jumbo) Preheat oven to 375°F. In a small mixing bowl for the stand mixer, blend butter, Crisco, dark brown sugar and granulated sugar. Add eggs, vanilla to blended mixture. In a large mixing bowl stir together flour, processed rolled oats, baking soda, cinnamon, salt and regular rolled oats. Drop by tablespoon or large serving spoon onto greased cookie sheet. Push raisins into top of each cookie. Bake at 375°F for 10 minutes. Loosen immediately. Cool on wire rack. Makes 24 (4-inch) flatties. Submitted by: R.K. Dreier |
