BEEF ROLLS 
1 1/2 lbs. round steak, cut about 1/2 inch thick
1 clove garlic, finely sliced
1 tsp. grated Parmesan cheese
1 hard cooked egg, chopped
1/2 tsp. parsley
2 slices bacon, cut in 1 inch pieces
1/2 tsp. salt
1/8 tsp. pepper

Set out a large heavy skillet and tight-fitting cover. Lay out meat in one piece on working surface. Cover steak with a mixture of above ingredients. Roll up steak to enclose mixture and tie securely. Heat in skillet about 5 minutes: 1 sm. onion, sliced

Add steak, roll and brown all sides slowly. Meanwhile, combine: 1/2 tsp. salt 1/4 tsp. pepper 1 bay leaf

Slowly add tomato mix to browned steak. Cover skillet and simmer about 1 1/2 hours or until steak is tender. Remove string and bay leaf. Slice and serve. Makes 4 to 5 servings.
