CHICKEN CORDON BLEU 
2 whole broiler-fryer chicken breast
1 egg, beaten
1 tbsp. water
1/2 c. seasoned bread crumbs
3 tbsp. cooking oil
1/2 tsp. salt
1/8 tsp. pepper
4 oz. boiled ham, sliced into strips
4 oz. Swiss cheese, sliced into strips

Debone and skin chicken breast and cut in 1 inch pieces. In plastic bag put seasoned bread crumbs. Mix egg and water in shallow bowl; dip chicken in egg mixture and then put into plastic bag to coat with crumbs.

In frying pan heat oil to medium temperature. Add chicken and cook, turning, about 7 minutes or until brown on all sides, and fork tender. Sprinkle salt and pepper on chicken; add ham, toss gently to mix and cook 1 minute. Sprinkle with cheese and heat 2 minutes or until melted. Makes 4 servings.
