AUTUMN COTTAGE PUDDING 
2/3 c. brown sugar, packed
1/2 c. flour
2 tsp. baking powder
1 egg, beaten
1/3 c. milk
2 tbsp. butter
1 tsp. vanilla
3 med. or 3 c. apples, pared, cored & chopped
1/2 c. finely chopped dried figs
1/2 c. flaked coconut

Stir together sugar, flour and baking powder. Combine egg, milk, butter and vanilla; stir into dry ingredients. Fold in apples, figs and coconut. Turn into greased 8 x 8 x 2 inch pan. Bake at 400 degrees for 30 to 35 minutes. Serve warm or cool, cut in squares. Top with ice cream or cream.
