APPLE BREAD 
3 eggs, slightly beaten
2 c. sugar
1 c. vegetable oil
1 tbsp. vanilla
3 c. all purpose flour
1 tsp. baking soda
1 tsp. cinnamon
4 c. chopped apples
1 c. walnuts

TOPPING:

2 tbsp. sugar
1/2 tsp. cinnamon

Stir together eggs, sugar, oil and vanilla in big bowl until ingredients are well mixed. Combine flour, baking soda and cinnamon, stir into liquid until evenly mixed. Add apples and walnuts. The batter will be very thick. Put in 2 loaf pans. Bake at 325 degrees for 1 1/2 hours in greased pan. Sprinkle topping on top of bread.
