PERFECT HUSH PUPPIES 
1 c. cornmeal
1/4 c. finely chopped onion
1/2 tsp. salt
2 tbsp. baking powder
3 tbsp. flour
2 lg. eggs, beaten
1/3 c. buttermilk

Stir together cornmeal, onion, salt, baking powder and flour. Beat the egg and buttermilk together and stir into the dry ingredients to blend. If very dry add more buttermilk, but the batter should be very thick. Cover and refrigerate for 1 hour.

Drop batter by tablespoon into deep oil 375 degrees. Fry 3 or 4 at a time, do not crowd. Fry until golden brown, turning if necessary. Open one to make sure it's done on inside.
