ONE EGG CAKE WITH COTTAGE
PUDDING
 
1 c. sugar
1/2 c. butter
2 tsp. baking powder
1 tsp. vanilla
1/4 tsp. lemon flavoring
1 3/4 c. flour
Pinch salt
1 egg + enough milk to fill cup

Cream sugar and shortening. Beat until fluffy. Add flavoring. Sift together flour, baking powder and salt. Add egg and milk mixture alternately with flour mixture. Beat after each addition. Bake at 350 degrees in glass pan or 375 degrees in metal pan for 30 minutes.

PUDDING:

Mix 1 rounded cup sugar with 1 rounded serving tbsp. of flour in cooking pan. Add 1 cup boiling water. Mix well. Beat egg well and add a little water. Add egg mixture gradually to sugar mixture. Cook until thick, stirring constantly. Add lemon and vanilla flavoring and 1 tbsp. butter. Serve over cake. Warm sauce over warm cake is delicious. Good also cold. You can also break up cake in a bowl adding sauce over each layer.
