CASSEROLE OF RED CABBAGE 
2 tbsp. butter
1 med. sized red cabbage, shredded
1 onion, finely chopped
3 med. sized cooking apples, peeled, cored & sliced
1/4 c. red wine vinegar
1/4 c. water
2 tbsp. brown sugar
1 tsp. salt
Freshly ground black pepper

Butter a large casserole. Add the cabbage and all the remaining ingredients. Dot with butter. Cover casserole and cook in a 300 degree oven for 2 1/2 hours. Serve with pork. Makes 8 servings.
