CUMMERBUND POTATOES 
3 lbs. new potatoes
1/3 c. unsalted butter
6 garlic cloves, finely minced
1 tbsp. kosher salt
1 lg. bunch fresh mint, stems, removed, finely chopped
2 lg. cucumbers, peeled, halved, seeded & cut into 1/2" cubes
Chopped chives (garnish)
Salt to taste
Freshly ground pepper to taste

Remove a spiral of skin from the middle of each potato. In a large skillet melt butter; cook garlic over medium heat 1 to 2 minutes. (Do not brown.) Add potatoes, 1/3 cup water, salt and mint. Cover; cook over medium heat 15 to 20 minutes, shaking pan occasionally so potatoes brown evenly. Add cucumbers; continue cooking 10 minutes more or until cucumbers begin to wilt. Season generously with chopped chives, salt and pepper. Serves 6.
