TROPICAL FRUIT PLATTER 
1 lb. watermelon, sliced, seeded & cut in wedges
1 sm. pineapple, halved, pared & cut in 2" slices with top reserved
1 papaya, peeled & sliced
2 mangoes, peeled & sliced
2 tangerines, peeled & sliced
2 bananas, sliced
Syrup: pulp of 6 passion fruit & 2 tbsp. sugar

Make the Syrup: Put the passion fruit pulp, sugar and 1/2 cup water into a small saucepan. Bring to a boil over medium heat and boil vigorously for 1 minute. Off heat, strain the liquid through a fine mesh strainer into a pitcher, pushing pulp with the back of a wooden spoon to extract all the juice. Let cool. Place the pineapple top in the center of a large round glass serving dish. Arrange the fruit attractively in circles around it. Pour over the passion fruit syrup and serve immediately. Serves 6 to 8.
