CHILI CON QUESO 
2 lbs. Velveeta cheese
1 clove garlic, minced
1 lg. onion, finely grated
1/2 green pepper, chopped
2 tbsp. butter
1 can Ro-Tel tomatoes
1 sm. can evaporated milk

Melt cheese in top of a double boiler. Saute garlic, onion and green pepper in butter. Add to melted cheese. Add Ro-Tel tomatoes and milk. Stir. Serve in a chafing dish with chips.
