GINA'S SCONES | |
3 1/2 c. white flour 1/8 c. baking powder 1/2 tsp. salt 1/2 tsp. nutmeg 1/4 lb. cold butter 1 c. half & half or cream 1 egg 1/2 c. sugar Sift dry ingredients. Cut in butter. I generally cut the butter in with a pastry cutter or butter knives, then rub between my fingers to more fully blend. Add remaining ingredients. Knead slightly. Roll 1/2 to 1/4 inch thick and cut into triangles or 1/2 circles. Bake at 400 degrees for 15 minutes. Brush with beaten egg and milk mixture. Serve with berries and cream. OPTIONS: 1 c. raisins and 1/2 tsp. orange zest 1 c. raisins, 1 cup chopped pecans, and 1/2 tbsp. orange zest NOTE: This recipe is adjusted for high altitude. For lower elevations, flour may need to be reduced a little. |
