RICE PUDDING 
2 c. River white rice (yellow box)
2 c. sugar
3 c. milk
1 c. water
Pinch of salt
6 egg yolks
1 tsp. lemon extract

Cook the rice in milk and water. When dried, add the sugar, salt and lemon. When dried remove from flame and add the very well beaten egg yolks, stirring constantly so the eggs won't separate. Pour in serving dish and sprinkle with ground cinnamon. Serve at room temperature.
