FRENCH ONION SOUP 
1 onion per person
Peanut oil
Toasted whole grain bread - one slice per person
Swiss cheese - one slice per person
Bouillon (beef) - 1 c. per person

Fry diced onions in peanut oil (brown well without burning). Spoon fried onions into individual serving bowls. Place broken up toasted bread atop. Pour 1 cup bouillon atop. Place shredded cheese atop. Bake in hot oven (400 degrees) until cheese has not only melted but is browned.

Onions create few if any tears when diced if chilled first.
