FRESH COCONUT PIE 
3 eggs
1 1/2 c. sugar
1 stick butter
1 tbsp. vinegar
1 tsp. vanilla
1 c. coconut
1 pie crust

Beat the 3 eggs. Add sugar. Stir in melted butter. Add vanilla, vinegar and coconut. Stir well. Pour into unbaked pie shell. Bake at 350 degrees until brown and crusty, 35-40 minutes.
