RUTH'S APPLE CAKE | |
1 cup finely chopped nuts 1/2 cup sugar 2 teaspoons cinnamon 1 1/2 cups very thin apple slices 1 teaspoon lemon juice 1 cup butter 1 cup sugar 3 large eggs 2 1/2 cups sifted flour 1 tablespoon baking powder 1 teaspoon baking soda 1 cup commercial sour cream 1 teaspoon milk In a small bowl combine the finely chopped nuts, 1/2 cup sugar, cinnamon, apple slices, and lemon juice. Stir to blend, and set this mixture aside. Now, cream the butter and sugar. Beat in the eggs, one at a time. Sift together the flour, baking powder, and baking soda. Combine the sour cream and the teaspoon of milk. Add the sifted flour mixture to the creamed mixture alternately with the sour cream, beginning and ending with the dry ingredients. Butter a 10-inch square pan. Pour half the batter in the pan and spread with entire apple-nut mixture. Spoon the rest of the batter over the filling.
