CARROT - RAISIN SALAD 
2 med. carrots
Ice cubes
2 tbsp. mayonnaise
1 tbsp. honey
1 tsp. grated lemon peel
1 tsp. lemon juice
1/4 tsp. ground ginger
1/3 c. raisins

In large bowl place carrots on ice for 30 to 60 minutes. Meanwhile, in medium bowl blend mayonnaise, honey, lemon peel, lemon juice and ginger. Grate carrots into bowl; add raisins. Stir and toss to coat and mix well. Cover and store in refrigerator. Makes 2 servings.
