CAPIROTADA (BREAD PUDDING) 
1 c. sugar
2 c. water
2 tbsp. butter
6 slices toasted bread
1 1/2 c. grated or sliced cheese
1 tsp. cinnamon
1 c. raisins

Caramelize sugar, add water and cinnamon and boil until sugar is dissolved. Place a layer of bread in a casserole; add cheese and raisins. Repeat until all ingredients are used. Add butter. Pour syrup over mixture and bake in moderate oven until the syrup is all absorbed by bread.
