SKY HIGH MERINGUE FOR PIE 
1 tbsp. cornstarch
2 tbsp. cold water
1/2 c. hot water
3 egg whites at room temp.
9 tbsp. sugar

Dissolve cornstarch in cold water. Add hot water and cook until thick and clear, about 5 minutes. Cool.

Beat egg whites to coarse foam. Add sugar gradually and beat until stiff and it keeps its peak, but still shiny. Gradually add cornstarch. Mix and beat well.

Pile on filling, making sure it touches pastry all around covering the edges. Bake in preheated oven 350 degrees for about 20 minutes.
