APRICOT BUNDT CAKE 
Grease and flour a large bundt pan. Do not start heating oven.

2 c. sugar
1 c. oil
3 eggs

Beat together and add 2 small jars of apricot baby food (or any baby fruit with tapioca). Mix.

Add 2 cups self rising flour, don't sift. Beat (can be done by hand). Add 1 teaspoon cinnamon and 1 cup chopped pecans. Mix. Pour into prepared pan and put in cold oven. Bake at 300 degrees for 1 hour and 15 minutes. Let cool about 10 minutes and remove from pan. Can be dusted with powdered sugar.
