ORANGE MOUSSE 
1 can evaporated milk
1 env. Knox gelatin
1/3 c. orange juice
2 tsp. honey
1/4 tsp. grated orange peel
1/8 tsp. nutmeg
1 1/2 c. fresh orange sections (about 2 oranges)

Thoroughly chill evaporated milk in small bowl. Meanwhile, sprinkle gelatin over orange juice in small saucepan heat over low heat until gelatin dissolves. Cool to room temperature.

Whip milk at high speed until thickened. While continuing to beat milk, slowly pour gelatin in with honey, orange peel, and nutmeg. Reserve 1/2 cup orange sections for garnish. Cut remaining sections into smaller pieces, fold into gelatin mixture.

Coat 4 cup mold with Pam. Pour in gelatin mixture. Chill until firm. Run tip of knife around edge of mold to loosen slightly. Unmold onto serving plate and garnish with reserved orange sections. 110 calories per serving. Yield: 4 servings.
