PUMPKIN FRITTERS 
1 c. grated raw pumpkin (see Note)
1 large egg
1 c. flour
1/2 c. sugar
1 tsp. vanilla
dash of salt
1/4 c. raisins (optional)
vegetable oil (for deep frying)
brown sugar (optional)

In a large bowl, combine pumpkin, egg, flour, sugar, vanilla and salt. Blend in the raisins. Form batter into 20 loosely packed 1-inch balls. In a large skillet, heat 1-inch of oil to 375°F. Drop fritters into the oil, being careful not to crowd and brown well on all sides. Drain fritters on paper towels and sprinkle with brown sugar.

Note: Canned pumpkin will give the dish a completely different character, lacking the crunchy texture that comes from fresh pumpkin.
