APPLE FRITTERS IN BEER BATTER 
3/4 c. unsifted flour
1 lg. pinch of salt
2 eggs, separated
2 tbsp. olive oil
1/4 c. warm beer
Vegetable oil for frying
Apples (peaches, strawberries, bananas, or corn may be substituted)

Heat vegetable oil in a wok or deep pan until very hot. In a bowl, mix flour, salt and egg yolks; add olive oil and whip with whisk. Heat beer, mix into above mixture slowly. Mix thoroughly. Chill batter.

Whip egg whites until stiff, fold into chilled batter. Dip fruit into batter and deep fry, turning only once. Sprinkle with confectioners' sugar before serving.
