LIMA BEANS 
1 sm. bag dried lima beans
2 smoked ham hocks or 2 c. smoked ham (diced)
1 can biscuits
Salt

Wash beans and take out blemished beans. Place in large pot with ham pieces and 1/2 pot of water. Cook for several hours. Test beans for softness. Salt to taste.

Press biscuits flat. Place biscuits on top of beans; let cook 15-20 minutes. Serve over cooked rice and top with chopped onion.
