SWISS POTATO SOUP 
1 sm. onion, minced
2 tbsp. butter
1 c. water
1 tbsp. instant chicken bouillon
1/2 tsp. salt
1/2 c. milk
1 1/4 c. instant potatoes
1 1/2 c. milk
1 c. Half and Half
2 c. shredded Swiss cheese
4 slices crisp-cooked bacon, crumbled
1/4 c. chopped chives

Microwave onion and butter in covered 2 quart casserole on High for 2 to 3 minutes or until onion is tender. Add water, bouillon, salt, and 1/2 cup milk; mix well. Microwave, covered, for 2 minutes or until mixture comes to a boil. Stir in potatoes, 1 1/2 cups milk, Half and Half and cheese. Microwave covered, for 5 to 7 minutes or until very hot and cheese is melted. Do not boil. Let stand for 3 minutes. Top with bacon and chives. 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
