BLACK WALNUT CAKE 
5 eggs
2 c. sugar
1 c. oil
1 c. black walnuts, chopped
2 c. self-rising flour
1 c. buttermilk
1 tsp. maple flavoring

Blend first four ingredients. Add flour and blend. Add buttermilk, and maple flavoring. Blend. Pour in greased and floured tube pan.

Bake at 350°F for 1 hour. Let cool in pan. Turn out on serving plate, poke holes on top with straw while warm. Spoon glaze over top.

Note: This cake is also good with chopped pecans in place of black walnuts.

Glaze:

1 c. sugar
1/2 c. water
1/2 tsp. maple flavoring

Mix all ingredients. Let boil for 1 minute, no longer.
