MAPLE WALNUT CAKE | |
1/2 c. solid vegetable shortening 1 1/2 c. packed light brown sugar 1 tsp. maple flavoring 2 eggs 2 1/3 c. all purpose flour 1/2 tsp. baking soda 1 c. buttermilk 1 c. chopped walnuts Cream shortening, then gradually add sugar, creaming until light and fluffy. Beat in flavorings and eggs, one at a time. Add dry ingredients alternately with buttermilk, beating after each addition until smooth. Stir in chopped nuts and put in greased and floured pan. Bake at 350 degrees for 50 minutes or until done. Let stand in pan or cake rack 10 minutes then turn out and cool completely. Spread on top and sides of cake with frosting. MAPLE FROSTING: Beat together 1/3 cup softened butter, 2 cups powdered sugar, 2 tablespoons light cream or canned milk and 1 tablespoon maple flavoring. Decorate with walnut halves. |
