Double recipe. 1 3/4 c. shortening 2 c. granulated sugar 2 eggs 1/4 c. molasses 3 scant c. flour 4 tsp. baking soda 1 tsp. cloves 2 tsp. ginger 2 tsp. cinnamon Cream shortening and sugar. Add eggs and molasses. Combine flour, baking soda and spices. Add to shortening mixture. I usually refrigerate this batter overnight. Take batter teaspoon by teaspoon and roll into balls and roll in sugar. Bake at 350 degrees for approximately ten minutes. Let cookies settle a few minutes on cookie sheet. Yield: about 80 cookies. A dear next door neighbor, Francie Horne, gave me this recipe. We lived next door to one another in Oakmont, PA. Our daughters were seven year old buddies. My daughter, Maureen, told me of Mrs. Horne's cookies and how much she liked them. Been baking them for about 30 years. Now they're favorites of my children and their children. |
