GOLABKI-POLISH STUFFED CABBAGE
ROLLS
 
1 lg. head cabbage
1/2 c. rice
Salt and pepper to taste
1 med. onion, chopped fine
2 tbsp. butter
1 lb. ground round
1/2 lb. ground pork
1 egg
5 slices bacon, crumbled
Spaghetti sauce, mushroom sauce or sour cream

Core cabbage; scald in boiling water. Remove leaves one at a time as they wilt. Cool before using. Wash rice in cold water. Boil 2 quart water; add rice for 10 minutes.

Sauté onion until transparent. Mix all ingredients well. Spread cool cabbage leaves with mixture. Roll and place in baking dish (9 x 13). Cook uncovered for 2 hours at 300°F. Baste occasionally with juices.

Add spaghetti sauce (homemade or any favorite tomato sauce is fine), mushroom sauce or sour cream just before serving.

Ewa in Vermont: It usually depends on what part of a country you are from. Other times it's personal taste as far as what you put into a recipe. I have 2 Polish grandmothers and both use beef and rice in their stuffed cabbage rolls. My mother-in-law was Polish & German. She used pork, rice, and seasoned them with chili powder.
I use beef, rice and for seasoning - herbes de provence.

My Mom and Busia always used rice but they also added a can of tomatoes cut up in quarters to flavor the sauce they cooked in. Also very delicious.

Polish stuffed cabbages HAVE NO rice or beef. Only ground pork is used!!! No real Polish cook will add rice! That must be a cost cutting invention!

i found that using basmati rice added to the value of this great dish but only needed twice as much water (I used beef broth for extra flavor) as rice and took @ :20 to cook till tender, also added the onion to the rice to tenderize it.
