MOM'S CREAMY CELERY CASSEROLE 
3 c. celery, cut in 1" lengths
1 c. raw carrot circles
2 tbsp. chopped green pepper
Salt, pepper & paprika
1/3 c. butter
1/4 c. flour
1/4 c. grated cheese
2 c. milk
Bread crumbs
Hard boiled eggs
Olives

Simmer raw vegetables in small amount of water about 15 minutes, just until tender. Add seasonings. Melt butter in skillet and stir in flour and cheese. Add milk gradually and cook over low heat. Stir constantly until thickened. Add vegetables.

Pour into oven dish. Sprinkle on bread crumbs. Put under broiler until golden brown. Remove and garnish with sliced hard boiled eggs and olives.
