POLLO (CHICKEN) HONDURENA 
4 tbsp. olive oil
2 cloves garlic (finely chopped)
1 cut up chicken
2 tomatoes (peeled and chopped)
1 can chopped tomato
2 pimentos (cut in strips) or 2 roasted red sweet peppers
1 jar pimentos
2 tbsp. capers
12 stuffed olives (cut in halves)
1/2 tsp. salt
1/4 tsp. pepper
1/4 c. (or more) tomato juice

Brown chicken and garlic in olive oil in deep skillet. Either simmer over low heat 1 1/2 hours.

Or: transfer to covered roasting pan (shallow pan covered with foil may be used). Bake at 375 degrees for 1 hour. Add juice if more is needed. Better make extra! Good over rice.
