POLLO MEJECANO (MEXICAN CHICKEN) 
1 chicken, cut up
1 sm. onion
1 stalk celery
1/2 bell pepper
1 can tomatoes
1 can water
6 tortillas, in pieces
Swiss cheese

Brown chicken in oil. Add rest of ingredients. Simmer together for 15 minutes and top with Swiss cheese (preferably in balls). Simple; serve with rice and beans.
