MIKE'S ONION SOUP | |
Very simple and delicious but do not substitute other types of onion or cheese. 2 cans beef broth (or diluted beef stock) 1 large red onion, thickly sliced 3 dashes Tabasco 6 slices (about 1/8-inch thick) Provolone cheese dry bread (commercial croutons are fine) Combine broth, red onion and Tabasco in saucepan. Bring to boil, cover, reduce heat and simmer for at least 45 minutes. Spoon into ovenproof bowls, add bread and cover with cheese slice. Boil in oven about 3-inches from heat until cheese is bubbly and slightly brown. Submitted by: Mike Thies |
