SOUTHERN PEANUT BUTTER CAKE 
2 c. sugar
2 c. all purpose flour
1 tsp. baking soda
1 c. buttermilk
1 c. crunchy peanut butter
1 stick butter, melted
1/2 c. oil
5 egg yolks
1 tsp. vanilla
1 c. packed coconut
5 egg whites, whipped

Whip egg whites; set aside. Mix (medium speed) the other ingredients (use large bowl). Fold in egg whites. Pour in 3 (9") greased pans. Bake in 350 degree oven for 25 minutes. Cool on racks.

FROSTING:

8 oz. cream cheese
1 stick butter
1 box 10X sugar
1 tsp. vanilla
1/2 c. chopped roasted peanuts
1/2 c. coconut

Whip cream cheese and butter until fluffy. Gradually add sugar, vanilla, peanuts and coconut.
