CALABASITAS 
3 or 4 zucchini, sliced
1/2 c. water
1/2 white onion, diced
1/2 tomato, diced
1 tbsp. butter
1 sm. can yellow corn
Longhorn cheese
Salt
Pepper

Saute zucchini, onion and tomatoes in butter for 2 to 3 minutes. Add 1/2 cup water to zucchini. Cook for 20 to 25 minutes or until done. Add corn, cheese, salt and pepper. Cook an additional 10 minutes.
