CALICO TOMATO SALAD 
5 med. tomatoes
1 sm. zucchini (about 6 oz.)
1 sm. yellow pepper
1/4 c. cider vinegar
2 tbsp. olive oil
2 tbsp. chopped parsley
2 tsp. sugar
1 tsp. salt

ABOUT 30 MINUTES BEFORE SERVING, OR EARLY IN DAY:

Cut tomatoes, zucchini, and yellow pepper into 1/2 inch pieces; place in large bowl and refrigerate if not serving right away.

Just before serving, toss vegetables with vinegar and remaining ingredients. Makes 8 accompaniment servings.
